MOLES

Mole is one of the most unique and delicious dishes in the entire world. The term refers to countless and complex preparations that often produce a thick, bold and flavorful sauce. The best known is a very special dark sauce called Mole Poblano, but there are many other varieties and colors. The word mole comes from the Nahuatl molli, meaning sauce. The indigenous origin of the name reveals its Prehispanic roots.
Over the years this preparations were modified, refined and adapted to the new ingredients and culinary uses.
Modern mole is a mixture of ingredients from three continents, North America, Europe and Africa, making it the first international dish created in the Americas.
