In Mexico, Adobo can be translated as marinade. This is the X I L L I interpretation of a style of barbeque done in the Yucatán region in an underground oven called a Pib, which lends its name to the beloved Cochinita Pibil, a slow-cooked suckling pig.

 

Heat:
Mellow, (almost none).

Tasting Notes:
Lightly Smoky, Slightly Fruity, Peppery (Dry Chile).
